Some Syrians will add onions, others would prefer garlic. For me, no matter what you add, I just LOVE vegan okra recipes. This Syrian recipe I got from my mom. ♥
Prep time: 30 – 45 minutes
What you will need to make this Syrian way of making vegan okra …
- 1 pound of small and fresh okras – you can also use frozen
- 1 can of diced tomatoes – or fresh Roma tomatoes diced
- 3 tbsp tomato sauce
- 1/2 garlic head peeled and finely diced or crushed
- 2 tsp coriander
- 2 tbsp of pomegranate molasses or to taste
- 3 tbsp olive oil
- salt and pepper to taste
Directions:
- Sauté okras in olive oil for about 5 minutes at medium high heat. Sautéing which will minimize sliminess and help the okras keep their shape
- Add the diced tomatoes
- Add garlic, coriander and salt
- Cook the okras at low to medium heat for about 15 minutes or until okras are tender
- Add pomegranate molasses and serve
