Bamiyeh | An Okra Main Dish Recipe

Some Syrians will add onions, others would prefer garlic. For me, no matter what you add, I just LOVE vegan okra recipes. This Syrian recipe I got from my mom. ♥

Prep time: 30 – 45 minutes

What you will need to make this Syrian way of making vegan okra …

  • 1 pound of small and fresh okras – you can also use frozen
  • 1 can of diced tomatoes  – or fresh Roma tomatoes diced
  • 3 tbsp tomato sauce
  • 1/2 garlic head peeled and finely diced or crushed
  • 2 tsp coriander
  • 2 tbsp of pomegranate molasses or to taste
  • 3 tbsp olive oil
  • salt and pepper to taste

 

Directions:

  1. Sauté okras in olive oil for about 5 minutes at medium high heat. Sautéing which will minimize sliminess and help the okras keep their shape
  2. Add the diced tomatoes
  3. Add garlic, coriander and salt
  4. Cook the okras at low to medium heat for about 15 minutes or until okras are tender
  5. Add pomegranate molasses and serve

How to serve

Syrian usually bamiyeh for lunch which is the biggest meal of the day. Having said that, you can serve it for dinner. Eat with pita bread or with white rice
