Now I gotta admit, Syrians prefer the more complicated recipes. They LOVE those recipes that take hours to make like kibbeh (bulgur fried food), yabrak (rolled vine leaves, and many more. But, when mom is busy, is on a low budget, does not feel like cooking, has some other chores to do around the house or just about any other reason, mom will make mjadarah. It is such a healthy and hearty dish that I am sure you will enjoy.
Why Mjadarah?

- A meatless meal that is high in fiber and rich in protein
- A perfect meal for meatless Mondays
Preparation time: 15 minutes
Cooking Time: 30 minutes
Servings: Share with 3 people you love
Ingredients:
- 1/2 cup of brown lentils
- 1 cup coarse burgul
- 2 medium sized onions – à la julienne
- Olive oil
- Salt to taste
How do I make it?
- Cook your lentil in water, 1 tablespoon of oil and a pinch of salt on medium heat until soft
- Toast your coarse burgul in 2 tablespoons of olive oil until golden brown (The color looks gorgeous and it is much tastier.)
- Add a cup of water and a pinch of salt and cook for 20 minutes at a very low heat.
- Sauté your onions until golden brown and use to garnish
- Layer: at the bottom, put your cooked burgul, lay over some lentils and top off with sautéed onions
Although simple, it is super tasty. On the side, you can have njoomiyeh and pickles. A Syrian favorite is pickled turnips and beets. Having said that, cucumber pickles complement it well as well.
