Aleppo is famous for Aleppo chili flakes. People from all over Syria and neighboring countries get their yearly provisions from Aleppo in chili flakes, ghar soap (laurel tree), zaatar (thyme), cheese and many other products.
Towards the end of summer is when Syrian ladies start making home made pepper paste and pepper flakes enough to last them until the next summer. The ladies feel proud to be able to make them from scratch considering the amount of work it takes. Aleppo chili flakes carry a recognizable smell and flavor. That is how they get an organic, homemade product that is flavorful.
The farmers and any savvy lady looking for extra income would sell any excess amounts to the local market. Some would give any leftovers to their extended family.
